    Muffins with Smoked Salmon Spread

    serves 4-6

    This is a good recipe for a brunch or social breakfast. Serve with stuffed mushrooms, plenty of fruit, orange juice and coffee. Maybe make some sweet muffins or pikelets also.


    List of Ingredients


    • 6 multi grain or plain english muffins
    • 3 hardboiled eggs
    • chives or dill
    • 125g unsalted butter
    • 80g smoked salmon, finely chopped
    • 6 tsp caviar


    Instructions


    1. Cream butter until very soft. Blend in the salmon. Split and toast muffins. Spread with salmon butter.
    2. Top each muffin half with hardboiled egg slices. Garnish with chives or dill and caviar (or lumpfish roe)
    3. Serve immediately while hot.
