Muffins with Smoked Salmon Spread

This is a good recipe for a brunch or social breakfast. Serve with stuffed mushrooms, plenty of fruit, orange juice and coffee. Maybe make some sweet muffins or pikelets also.
List of Ingredients
- 6 multi grain or plain english muffins
- 3 hardboiled eggs
- chives or dill
- 125g unsalted butter
- 80g smoked salmon, finely chopped
- 6 tsp caviar
Instructions
- Cream butter until very soft. Blend in the salmon. Split and toast muffins. Spread with salmon butter.
- Top each muffin half with hardboiled egg slices. Garnish with chives or dill and caviar (or lumpfish roe)
- Serve immediately while hot.
