when I stay at dad's house there is always a yummy and extravagant (in time and money) breakfast
This is the serves 1 version
List of Ingredients
2 eggs
dollop of milk/cream (I use milk)
salt and pepper
mustard powder (1/4-1/2 tsp)
1-2 spring onions finely sliced
1 small tomato chopped
4 mushroomes, sliced
2-3 spring onions, broken in pieces (by hand)
6-8 largish prawns
lots of butterRecipe
Whisk eggs, milk salt, pepper, mustard together
Melt butter in pan. Add onion and tomato and cook until collapsed and fragrant.
add mor butter, mushrooms and more pepper and cook until just tender. Add prawns and allow to redden, breaking in pieces of snow pea.
Finally add egg mixture (having addded more butter if required) and allow to cook on lowest heat until set.
Serve with a glass orange or cranberry juice and freshly brewed coffee
