one 20 x 20 cake
this is good frosted with lemon cream cheese frosting and shredded coconut but I like banana cake best plain.
List of Ingredients
- 120g butter
- 3/4 cup (150g) caster sugar
- 1 egg (61g)
- 1 tsp vanilla essence
- 300g very ripe banana lightly mashed (2-3 depending on size)
- 1 tsp bicarb soda
- 1 tbs milk
- 1 1/4 cups (150g) self raising flour, sifted
Instructions
- Cream butter and sugar until light and fluffy.
- Add eggs and beat until well combined
- Add banana and vanilla essence mixing in to combine.
- Disolve bicarb in the milk. Fold flour and milk alternately into the cake mixture. Do not overbeat.
- Spoon batter into greased and lined 20 cm tin. Smooth top.
- Preheat oven to 180C. Bake 50-55 min until cake comes away from sides. Skewer test is good too.
- Cool and ice if desired.
