    Easy Moist Carrot Cake

    Kids who wont eat vegetables, will ironically eat cake made with carrot, zucchini or beetroot all of which make the cake very moist and sweet. This one is a simple carrot cake.


    List of Ingredients


    • 1 cup carrots, grated
    • 3/4 cup honey
    • 1/2 tsp nutmeg
    • 1/4 tsp salt
    • 1 cup raisins, chopped
    • 1 tbs butter
    • 3/4 cup wholemeal flour
    • 1/2 tsp bicarb of soda
    • 3/4 cup water
    • 1/2 tsp cinnamon
    • 3/4 cup wholemeal plain flour
    • 1/2 cup walnuts (optional)


    Instructions


    1. Put carrots, raisins, water, honey, butter, cinnamon and nutmeg in a saucepan. Bring to the boil and simmer for 10 minutes. Allow to cool.
    2. Sift together flour, salt, and bicarb of soda. Add this, with walnuts to the carrot mixture. Stir well. Pack into an oiled loaf tin (I would grease it with butter actually).
    3. Bake for 1 hour in a moderate oven. Cool in tin. Ice with coconut icing if desired (nice without icing in my opinion)
