Jaffa Almond Ring Cake

List of Ingredients
- 3 eggs
- 3/4 cup reduced cream
- 1 1/3 cups self raising flour
- 1 cup sugar
- 1 1/2 tsp grand marnier or brandy (or use orange essence)
- 2 tsp grated orange rind
- 2 tbs cocoa
- 2 tbs apricor jam or orange marmalade
- 1/4 cup slivered almonds
- melted chocolate
- almonds
- pure cream, lightly whipped
Instructions
- Beat eggs and sugar together until light and fluffy. Fold in cream, flour, Grand Marnier and orange rind.
- Place 1/4 of mixture into a bowl and mox in jam, cocoa and slivered almonds.
- Pour plain mixture into a buttered 5 cup ring tin and top with cocoa mixture (or vice versa)
- Bake 180C, 50 minutes or until cooked when tested. Cool on a wire rack.
- Decorate with melted chocolate and almonds, fill centre of cake with freshly whipped cream and serve.
