Microwave coconut Butterscotch Pudding

List of Ingredients
- 2 tbs golden syrup
- 100g butter
- 1 3/4 cup SR flour
- 1/2 cup brown sugar (press out lumps) not the raw one
- 1/2 cup dessicated coconut
- 2/3 cup coconut milk (or for milder flavour use normal milk)
- 1 egg
- 1 tsp vanilla
- 2 cups boiling water
- 1/3 cup golden syrup
- 3/4 cup brown sugar (more)
- 1 1/2 tsp cornflour
- toasted flaked coconut
Instructions
- Place 2 tbs golden syrup and the butter in a microwave safe bowl and microwave 1 minute on high until butter starts melting (don't overcook)
- Mix together flour, 1/2 cup brown sugar, dessicated coconut.
- Combine microwaved mixture with 2/3 cup coconut milk (or milk). Mix in 1 egg, 1 tsp vanilla. Mix it all through then add to dry ingredients.
- Mix together sauce ingredients - 2 cups boiling water, 1/3 cup golden syrup, 3/4 cup brown sugar, 1 1/2 tsp cornflour.
- Mix sauce ingredients together really well and pour over back of spoon onto pudding.
- Microwave 12-14 minutes medium power. Sprinkle with toasted flaked coconut and serve with cream or icecream.
