Peach and Passionfruit Crumble

List of Ingredients
- 1 1/3 cups plain flour
- 2 x 425g cans peach pie filling
- 1 egg
- pinch baking powder
- 100g butter, cubed
- 1/4 cup caster sugar
- 1/4 cup passionfruit pulp
- 1/4 cup flaked almonds
- 1/4 cup cornflour
Instructions
- Place flour and baking powder in a food processor. Add butter and blend until evenly distributed.
- Combine egg and sugar together and add to flour mixture. Blend into ball.
- Roll out 3/4 of mixture to line 25cm flan tin (with a removable base). Refrigerate for 10 minutes.
- Line pastry with greaseproof paper and load with rice or beans. Bake 200C for 15 minutes. Remove loading (can reuse next time) and bake at 180C a further 10 min.
- Combine peach, cornflour and passionfruit. Place fruit mixture in pastry case. Grate remaining pastry over the surface and sprinkle with almonds.
- Bake at 200C 20-30 minutes or until pastry is golden. Cool and cut into wedges.
