- 6 1/2 oz butter + 1 oz
- 1 egg, beaten
- 8 oz marie biscuits
- 1/2 cup sugar
- 1/2 cup chopped walnuts
- 2 tbs cocoa
- 1/2 cup coconut + 8 oz
- 2 oz chopped glace cherries (red)
- 3 oz melted copha
- 1 tbs caster sugar
- 2-3 drop cochneal (red colouring)
- 1/2 tin condensed milk
- 3 oz cooking chocolate
Instructions
- Melt 6 1/2 oz butter. Add sugar and cocoa and bring to the boil. Add egg, beat well. Cook 1 minute.
- Pour over walnuts,1/2 cup coconut and chopped biscuits. Stir well.
- Press into greased tin.
- Combine cherries, copha, castor sugar, cochneal, 8 oz coconut and crushed biscuits.
- Stir well and press onto base.
- Chop chocolate roughly and place in metal bowl over hot water. Add butter and stir until blended.
- Spread over filling. Allow to cool. Chill. Cut into squares.
