    • 6 1/2 oz butter + 1 oz
    • 1 egg, beaten
    • 8 oz marie biscuits
    • 1/2 cup sugar
    • 1/2 cup chopped walnuts
    • 2 tbs cocoa
    • 1/2 cup coconut + 8 oz
    • 2 oz chopped glace cherries (red)
    • 3 oz melted copha
    • 1 tbs caster sugar
    • 2-3 drop cochneal (red colouring)
    • 1/2 tin condensed milk
    • 3 oz cooking chocolate


    Instructions


    1. Melt 6 1/2 oz butter. Add sugar and cocoa and bring to the boil. Add egg, beat well. Cook 1 minute.
    2. Pour over walnuts,1/2 cup coconut and chopped biscuits. Stir well.
    3. Press into greased tin.
    4. Combine cherries, copha, castor sugar, cochneal, 8 oz coconut and crushed biscuits.
    5. Stir well and press onto base.
    6. Chop chocolate roughly and place in metal bowl over hot water. Add butter and stir until blended.
    7. Spread over filling. Allow to cool. Chill. Cut into squares.
