Beef Casserole with Rice

Recipe Introduction
serves 4, meant to be cheap, I would be tempted to add veg eg carrot or celery or beans or mushrooms or leek or fennel or silverbeet ie suit yourself.
List of Ingredients
- 600g beef round steak, cut into strips
- 140g tomato paste
- flour to dust meat before brownong
- 1 onion, roughly chopped
- 1 can diced tomatoes (400g)
- 1 tbs oil
- 400g long grain rice
- 2 cloves garlic, crushed
- salt and pepper to taste
- parsley
Instructions
- Lightly toss beef strips in flour, seasoned with salt and pepper.
- Heat oil on medium heat and brown beef strips in a deep pan or casserole dish a few minutes until lightly browned.
- Remove from pan and set aside. Add onion and garlic to pan and soften. Return beef to pan and add tomatoes, tomato paste and one cup water.
- Simmer on very low heat (or place in moderate oven) for 2 hours.
- Serve with steamed rice or garnish with parsley.
