Recipe Introduction
It's not really caribou of course.My imaginative grandmother decided to call it that.
Use fresh tomatoes instead of paste if you like. Blanch, peel and finely chop quite a lot of them if you go this way.
List of Ingredients
- 500g beef or kangaroo
- 4 cloves garlic
- 4 carrots
- 2tbs tomato paste (more if you want)
- 1-2 cups beef stock
- bay leaf and pepper corns
- Oil
Instructions
- Brown garlic and beef in oil (or use leftover pot roast and just brown garlic.
- Add bayleaf and peppercorns. Add stock and carrots and simmer until carrots nearly tender.
- Add in tomato paste, mix well and allow to cook in for 10 mins.
- serve with mash and a side of peas or creamy green salad
