serve with rice or rissoni. Scatter with slivered almonds if desired
List of Ingredients
- 500g casserole beef (2cm dice) - I sometimes use roo
- 1 brown onion, peeled and diced
- 1/2 tsp ground cinnamon
- 3 cups (700ml) chicken stock liquid
- 100g dried apricots
- 100g pitted prunes
- 2 tbs olive oil
Instructions
- Coat beef in cinnamon and half the oil. Brown in heated casserole pot over medium to high heat in 2 batches. Set aside.
- Cook onion is remaining oil until transparent. Return meat to pot adding stock, cover and bring to boil.
- Reduce heat to low and simmer covered 1 1/4 hours stirring occaisionally. Add plums and apricots and cook a further 15 minutes.
- (alternatively place in preheated 160C oven for 1 hour 10 minutes. Then add in dried fruit and heat a further 5 min.
