    Hearty Beef Stew

    List of Ingredients


    • 1kg beef or kangaroo
    • 2 lge onions
    • 8 potatoes
    • 4 swedes
    • 4 carrots
    • 1/2 bottle red wine
    • 2 bay leaf
    • small amount water
    • black pepper
    • pepper medley
    • 1-2 tsp vegeta (veg stock powder)
    • 2tbs butter
    • 2tbs flour
    • extra butter


    Instructions


    1. Brown meat and onion in generous amount butter
    2. Add pepper, carrots bayleaf and stir for 1 minute.
    3. Add other vegies. Turn up heat and our in wine. Let the alcohol boil off.
    4. Add water and stock powder and turn heat down to minimal. Cook at least 1 1/2 hours until everything is tender.
    5. Knead butter and flour together (roux) and add to the casserole. continue cooking 15 minutes.
    6. Serve alone or with rice, mash, crusty bread or garlic bread.
