Recipe Introduction
Serve with macaroni cheese or creamy mashed potato. A green salad compliments it well. The bones are important for adding flavour so dont try to get the supermarket deboned versions. Serves 4
List of Ingredients
- 4 pieces osso buco (veal or beef shin)
- 1 large onion
- 2 carrots
- 4 stalks celery
- 1 cup dry white wine
- 1 tin (400g) tomatoes
- 3 tbsp tomato paste
- 2 cloves garlic
- 1/2-1 tsp lemon zest
- sea salt
- very finely chopped parsely
- black pepper
- olive oil
Instructions
- Heat olive oil and brown both sides of meat on high. Put aside in one layer to rest.
- In the same pan add in finely chopped onion, carrot and celery (some add capsicum or fennel bulb) and allow to caramelize.
- Season well with pepper. Making sure heat is high add in wine and cook down for 2 minutes.
- Add meat back in along with tomatoes and tomato paste.
- Cook on very very low for 1-2 hours stirring every 15-20 minutes.
- Mix together garlic, zest, parsely and salt (this is called a gremolata)
- Just before serving stir gremolata into casserole.
Final Comments
This is a good recipe to serve to guests. The long slow cooking is essential so the meat wont be tough. If you really can't get osso buco use gravy meat or something similar.
