makes about 3 doz.
if you make many they can last a few days in an airtight tin but they are nicest fresh of course
List of Ingredients
- 3/4 cup softened butter
- 2 cups brown (ie raw) sugar (don't use dark brown)
- 2 tbsp grated lemon rind
- 1 cup finely chopped pecans
- 2 eggs
- 1 tsp lemon juice
- 2 cups sifted flour
Instructions
- Cream butter. Gradually add brown sugar, mixing well.
- Add eggs, juice and rind and blend well.
- Cover bowl with towel/cloth (steven claims it has to be a white or yellow cloth...according to his pagan faith) and refrigerate overnight
- Shape into 1" balls and place approximately 3" apart on a greased baking tray.
- Cook at 375C for 20 minutes. Cool on racks.
