Chicken Curry

a good one to make ahead since it tastes best if given a couple of days to blend.
I have used lamb shanks or kangaroo instead of chicken.
Even though you can use chicken fillets, the bones add to the richness of the gravy.
List of Ingredients
- 1 chicken cut into pieces
- 1 tbs ground ginger
- garlic
- 1/2 tsp fenugreek seeds
- 1 onion, sliced
- curry powder (use a good one if possible)
- 4 tbs coriander powder
- 4 potatoes, roughly chopped
- 3 tomatoes, roughly chopped
- 3 cinnamon sticks
- 2 tbs almonds (soaked and ground)
- bay leaves and curry leaves
- 1 tsp chilli powder
Instructions
- Heat oil. Add cinnamon sticks, fenugreek seeds and bay/curry leaves. Add onion. Cook til brown.
- Add chicken pieces. Add tomato and garlic.
- Add ginger. Cover. Cook for 10 minutes. Add coriander powder and chili with 4-5 cups water. Cover and cook (medium heat)
- After 15 minutes add potatoes and salt. When potato is cooked add almond paste mixed with a little milk.
- Boil a few minutes then take off heat.
