    trying to remember how my friend used to make it


    Recipe Introduction


    serves 4 (ish) a good vegetarian main or side dish or light meal in itself. Served with dahl, alu gobi etc makes a feast


    List of Ingredients


    • 8 hardboiled eggs
    • 1 onion, very finely chopped
    • 5 garlic cloves, very finely chopped
    • large lump of ginger, very finely chopped
    • 1-2 red chillis very finely chopped
    • 1 lge or 2 smaller tomatoes, very finely chopped
    • salt,
    • 1/2 tsp cumin (optional)
    • 2 tsp satay chilli paste (or similar - optional)
    • ghee or olive oil
    • 1 tsp mustard seeds (optional)


    Instructions


    1. Heat oil, add in mustard seeds, when they start popping add onion, garlic, ginger and chilli (make sure heat is on low)
    2. Stirfry until fragrant and add spices and tomato. Allow to very slowly cook down a bit then add in hardboiled eggs and just stir through intil warm. Can be served staright away but best next day (so flavours have soaked in)
    3. Lovely with rice, bread or potato
