Egg Sambal

Recipe Introduction
serves 4 (ish) a good vegetarian main or side dish or light meal in itself. Served with dahl, alu gobi etc makes a feast
List of Ingredients
- 8 hardboiled eggs
- 1 onion, very finely chopped
- 5 garlic cloves, very finely chopped
- large lump of ginger, very finely chopped
- 1-2 red chillis very finely chopped
- 1 lge or 2 smaller tomatoes, very finely chopped
- salt,
- 1/2 tsp cumin (optional)
- 2 tsp satay chilli paste (or similar - optional)
- ghee or olive oil
- 1 tsp mustard seeds (optional)
Instructions
- Heat oil, add in mustard seeds, when they start popping add onion, garlic, ginger and chilli (make sure heat is on low)
- Stirfry until fragrant and add spices and tomato. Allow to very slowly cook down a bit then add in hardboiled eggs and just stir through intil warm. Can be served staright away but best next day (so flavours have soaked in)
- Lovely with rice, bread or potato
