Apple Risotto

List of Ingredients
- 2 granny smith apples, grated
- 2 tbsp butter
- zest of 1 lemon
- 1 tsp cinnamon
- 1 tsp vanilla bean paste 9or 1 vanilla bean)
- 4 tbsp white sugar (or to taste)
- 2 cups arborio rice
- 4 cups apple juice
- 1/4 cup white wine.
- 300ml double cream
Instructions
- Microwave apple juice on high for 3 minutes until hot. Melt butter and cook apple for 30 seconds on high heat. Add in rice and stir vigorously 1 minute.
- Add wine and stir vigorously. Add 1/2 cup apple juice, vanilla, lemon zest, cinnamon and stir unti liquid absorbed.
- Keep adding apple juice little by little and stirring 'til absorbed. Reduce heat a little if needed.
- About half way through stir through the sugar. Keep adding the rest of the apple juice.
- after about 20 minutes of adding and stirring it should be mostly absorbed. Test for tenderness (if not tender use more apple juice and time).
- Turn off heat and stir through cream letting it melt through.Serve hot garnished with fresh or frozen berries. (can also be served with biscotti or with vanilla icecream)
