Healthy and low in fat. Avocado makes it creamy
List of Ingredients
2 lge avocadoes, skin and seed removed
1/4 honeydew melon skin and seeds removed, diced
2 eggwhites whipped until peaks form
1 bunch mint, leaves removed (?that's what it said?)
1/2 cup natural yoghurt
juice of 1 lemon
3/4 cup caster sugar
edible blossoms (eg violet, borage) or mint leaves to decorateRecipe
1. Use a blender or food processor to blend the avocado, melon, lemon, sugar, mint and yoghurt until velvet smooth.
2. Fold in whipped eggwhites and pour into a terrine dish, loaf pan or plastic freezer storage container.
3. Freeze 6 hours or overnight.
4. Remove from freezer 10 minutes before serving. Turn out of container and cut into desired shape (rectangles, wedges or triangles)
5. Best served with fresh seasonal fruit.
