Banana Bread Pudding

- 5 medium firm bananas, sliced
- 4 cups bread cubes (raisin is good)
- 1/2 tsp cinnamon
- 1/2 tsp vanilla
- 1/8 tsp nutmeg
- 2 eggs, beaten
- 1 3/4 cups skim milk
- 1/2 cup firmly packed brown sugar
Instructions
- Heat oven to 180C. Grease 10x6 inch baking dish.
- Place 2 cups bread cubes in greased dish, top with banana slices and then remaining bread cubes.
- In medium bowl combine brown sugar, cinnamon, nutmeg, vanilla, milk and eggs. Blend well.
- Pour over bread cubes. With back of spoon, press bread cubes down slightly. Let stand 10 minutes.
- Bake 45-50 minutes or until centre is set. Store leftovers in fridge (duh)
- Best served with icecream or yoghurt
