Banana Caramel and Coconut Tart

- 1 cup sugar
- 1/2 cup water
- 1 prebaked tart shell (make or buy)
- 4-5 bananas, sliced
- 200ml cream
- 3/4 cup shredded coconut (toasted)
Instructions
- Combine sugar and water in a medium sized saucepan. Stir over low heat until sugar dissolved.
- Bring to boil. Boil until golden.
- Remove from heat and stir in cream using a wooden spoon. The mixture will rise and bubble so work carefully holding the end of the spoon.
- Stir until combined and set aside to cool.
- Spread half the cooled caramel into the tart shell, decorate with banana slices and drizzle with remaining caramel. Sprinkle with coconut.
- Serve with whipped cream or icecream.
