    Banana Caramel and Coconut Tart

    List of Ingredients


    • 1 cup sugar
    • 1/2 cup water
    • 1 prebaked tart shell (make or buy)
    • 4-5 bananas, sliced
    • 200ml cream
    • 3/4 cup shredded coconut (toasted)


    Instructions


    1. Combine sugar and water in a medium sized saucepan. Stir over low heat until sugar dissolved.
    2. Bring to boil. Boil until golden.
    3. Remove from heat and stir in cream using a wooden spoon. The mixture will rise and bubble so work carefully holding the end of the spoon.
    4. Stir until combined and set aside to cool.
    5. Spread half the cooled caramel into the tart shell, decorate with banana slices and drizzle with remaining caramel. Sprinkle with coconut.
    6. Serve with whipped cream or icecream.
