Champagne Pears

serves 4. You probably want nice firm pears for this.
List of Ingredients
- 4 pears, peeled
- 2 cardamom pods, crushed
- 4 whole cloves
- 1 cup champagne (or sparkling wine)
- 5cm cinnamon stick
- 1 star annise (optional)
- 1 vanilla bean, halved lengthwise
- 1/4 cup caster sugar (optional, depends on the pears)
- 3 egg yolks
- 1/4 cup castor sugar
Instructions
- Place pears, champagne, sugar and spices in medium saucepan. Bring to boil. Reduce heat and simmer8-10 minutes.
- Remove from heat and cool.
- Place egg yolks, sugar and 1/2 cup of the poaching liquid in the top of a double boiler over simmering water. Beat with an electric handbeater until thick and creamy. Serve the pears topped with champagne sabayon.
Final Comments
seems very posh but is quite easy if you have the equipment.
