    Crepes with Port Glaze Pears

    Poached pears are a really classy dessert. This variation wraps mosrels of sweet pear in crepes, to torally impress your guests. (serves 2-4)


    List of Ingredients


    • 3/4 cup plain flour
    • 3 eggs
    • 1 tbs oil (or melted butter)
    • 1 cup milk
    • 250g marscapone
    • 1 cup finely chopped walnuts
    • 2 tbs honey (+ 1/4 cup honey)
    • 1/2 cup port
    • 1/2 tsp mixed spice
    • 3 ripe pears, peeled, quartered, cored and thinly sliced


    Instructions


    1. Sift flour into bowl. Make well in centre and gradually stir in combined eggs, oil and milk.
    2. Mix to a smooth batter (may use blender, processor) cover and stand (in fridge) 30 minutes
    3. Pour 2-3 tbs batter into heated crepe pan, cook until pale golden underneath. Turn and cook other side.Repeat with remaining batter.
    4. Combine marscapone,walnuts and2 tbs honey. Spread a little filling onto each crepe
    5. Combine port and honey in small frypan. Bring to the boil, then reduce heat and cook until mixture is syrupy. Add spice.
    6. Add pear slices and continue cooking 2-3 mins until pears are tender. Spoon over filled crepes
