Crunchy Caramel Pears

List of Ingredients
- 2 tbs golden syrup
- 1 tsp vanilla essence
- 300ml thickened cream
- 825g can pear halves (drained)
- 3 egg yolks
- 1 peanut brittle bar, crushed
- 2 tsp tia maria
Instructions
- Place golden syrup and cream in a heatproof bowl on top of a saucepan of simmering water (or use double boiler)
- Stir until syrup has dissolved.
- Add egg yolks, tia maria and vanilla. Stir until mixture thickens slightly (about 6 mins)
- Arrange pears in a shallow serving dish, pour over caramel and top with crushed brittle.
- Garnish with a sprig of mint.
Final Comments
Served with custard or a good vanilla icecream (like Golden North) this is very nice.
