Don't worry this recipe has no nutritional value whatsoever (unless you use healthy icecream-lol) it is purely for indulgence.
List of Ingredients
- 2 cups self raising flour
- 1/2 cup cocoa
- 1/4 cup caster sugar
- 125g butter, cubed
- 1 egg, lightly beaten
- 2/3 cup sour cream
- icing sugar for garnish
- choc curls to decorate
- 1 litre icecream (suggestions: chocolate ripple, chocolate, vanilla, or a mix)
Instructions
- Combine flour, cocoa and sugar in food processor and blend until combined. Add butter and blend to distribute evenly.
- Add egg and sour cream and blend lightly until mix forms a ball. Roll out 1 cm thick. Cut into 8cm-10cm rounds.
- Bake 220C 15-20 mins. Cool.
- To serve: sandwich cookies together with 4 scoops icecream (per 2 cookies) and dust with icing sugar. Garnish with chocolate curls.
