Sunshine Sundae with Dried apricot sauce

List of Ingredients
- 1/2 cup dried apricots
- 4 ripe bananas, peeled
- almond bread or icecream wafers to serve (optional)
- 1/4 cup fresh orange juice
- 1litre vanilla icecream (or use non-dairy option)
- 2 tbs shredded coconut, toasted
- 1 tbsp honey (or used maple syrup)
- 440g can pineapple thins drained (unsweetended- can use fresh)
- can sprinkle with walnut crumbs if liked (not in original recipe)
Instructions
- Simmer apricots in orange juice and honey until soft. Puree in a blender until smooth.
- Split bananas in half lenthwise. Assemble 4 sundaes of banana halves, 2-3 scoops icecream and pineapple thins
- Drizzle with sauce and sprinkle with coconut or nuts. Serve with almond bread.
Final Comments
If you want to microwave the sauce the ingredients are the same. Cook them 100% for 2-3 mins.
This is a HUGE serve of dessert. You could try halving the serving sizes.
