    Tropical Ice Cream Bombe

    serves 12, this really is unlikely to keep well anywhere so only make as mucha s you want to eat and do serve immediately


    List of Ingredients


    • 1 swiss roll
    • 6 canned pineapple rings
    • 4 egg whites
    • 2/3 cup caster sugar
    • 1 litre icecream (recommended- vanilla, passionfruit or lemon)
    • 1 tbs flaked almonds


    Instructions


    1. Cut the swiss roll into 6 thinck slices and place on a greaseproof paper lined tray. Top each slice with a pineapple ring.
    2. Place a large scoop of icecream on each slice and refreeze the whole thing. Keep frozen until required.
    3. Preheat oven to 200C. Just before serving beat eggwhites until stiff peaks form and gradually beat in sugar. Working quickly cover each ball of icecream completely with meringue, sprinkle with almonds and bake 2-3 minutes until lightly golden.
    4. Serve immediately.


    Final Comments


    You can use layered slices of tinend peach for the pineapple. It is up to you if you prefer a different flavour of icecream.
