serve with toast or 9 grain bread. For a more substantial meal add onions, bacon, chives (or other herbs), mushrooms, capsicum, spinach in the middle of the omelette (or cooked in)
List of Ingredients
- 120g cottage cheese
- 2 eggs
- 1 tbs milk
- 1 tsp chopped parsley
- black pepper to taste
- 1 tsp butter
- 25g parmesan cheese(grated)
- paprika
Instructions
- Whisk together cottage cheese, eggs, milk, parsley and pepper.
- Melt butter in a small frypan. When heated sufficiently, add omelette mixture.
- Cook for 3-4 minutes. Top with grated parmesan and a sprinkling of paprika and grill.
