serves 6 (2 each)- Bake the crusts in a hot oven until crunchy. Use as a snack with cream cheese or peanut butter or dip of your choice
List of Ingredients
- 12 slices wholemeal bread, crusts removed
- 75g butter
- paprika
- 12 eggs (45g ones)
- 3 spring onions, chopped
- 1 cup grated swiss cheese
Instructions
- Flatten both sides of bread with a rolling pin. Spread both sides with butter and press into muffin tins.
- Crack an egg into each and sprinkle with spring onion, cheese and paprika.
- Bake at 180C for 20 minutes or until set.
- Serve with cherry tomatoes halved and mixed with spring onion or basil.
