Chilli Beef Pappadums with Mint Raita

List of Ingredients
- 20g ghee
- 1 onion, chopped
- 1 tsp chopped red chilli
- 1 tsp ground cumin
- pinch cinnamon
- 250g beef mince
- 2 tbs tomato paste
- 2 tsp cornflour
- 12 large pappadums
- ghee (for shallow frying)
- 1 cup natural yoghurt
- 1/2 cucumber seeded and chopped
- 2 tbs chopped mint
Instructions
- Melt ghee in frypan and saute onion, chilli, cumin, cinnamon and mince until well browned.
- Mix cornflour to a paste with a little water. Dip pappadums in water to soften. Drain on absorbent paper.
- Place a tbs of filling in the centre of each pappadum. Brush the edges with cornflour paste and fold in half to enclose filling. Heat ghee in a frypan.
- Fry pappadums until golden. Drain on absorbent paper. Combine yoghurt, cucumber and mint together and serve as a sauce for pappadums.
Final Comments
can be served with coriander, mint or shaved ribbons of cucumber for garnish. Or with rocket dressed with a zesty vinaigrette
