Grilled Flat Mushrooms with Spring Salsa

List of Ingredients
- 1/4 cup olive oil
- 2 tbs mirin/ sherry
- 2 tbs sweet chilli sauce
- 8 (600g) flat mushrooms, stalks trimmed
- 1 bunch asparagus, trimmed
- 1 medium tomatoe, quartered and deseeded
- 1 lebanese cucumber, halved and deeeded
- 1/2 small red onion, finly chopped
Instructions
- Combine oil, mirin and chilli sauce in a small bowl. Brush mixture over mushrooms and stand for 10 minutes.
- Cook asparagus in frypan of simmering water over medium heat for 1-2 minutes (until tender)
- Drain and refreh under cold water. Cut into 1cm pieces. Cut tomato and cucumber into 1 cm dice.
- combine cut vegies and onion in a bowl. Preheat grill on medium high. Place mushrooms onto grill tray about 5 cm from heat source and cook 4-5 minutes or until tender.
- Serve with asparagus mixture piled on top.
