Scallops on Crouton

Recipe Introduction
This was a lovely entree to a three course meal served in the garden with a blue checked cloth on the table.
List of Ingredients
- 1-3 scallops per person (depending on their size)
- 1 slice french stick per person (if you want to be more delicate and have small portions trim it or use a cookie cutter)
- olive oil
- butter
- fresh garlic
- 1 nectarine
- handful of rocket
- french dressing (homemade please so it's not overpowering of the scallops. )
Instructions
- Slice nectarine and combine with rocket tossing in a small amount of dressing.
- Melt butter with olive oil in pan with some crushed garlic (or finely chopped)
- Fry bread 30 seconds each side.
- Rub bread with a halved garlic clove and place in a cool (150C) oven for 5-10 minutes.
- Place scallops in the pan (removing garlic only if it is burnt) and fry for 1 min each side.
- Serve croutons topped with scallops and sprinkled with black pepper.
- Arrange salad over and around it and drizzle with extra dressing if desired.
