    These are too luxurious for every day but for a very special dinner could be an entree for 4-5 people. Serve them hot off the barbie with dressed cucumber strips, or sweet chilli and a squeeze of lime or lemon, or tartare. Can also be served cold as part of a mezze or antipasto plate.


    List of Ingredients


    • 1/2 kg trim smoked salmon
    • 1/2 kg fresh salmon
    • 1 tbs lemon juice (can use lime)
    • 2 celery stalks, finely diced
    • 1 onion, finely diced
    • 200g breadcrumbs
    • 1 tbs dijon mustard
    • 1 bunch chives
    • salt and pepper to taste.


    Instructions


    1. remove bones from salmon. Blitz smoked salmon in food processor, then set aside and blitz the fresh salmon.
    2. Place together in a stainless steel bowl. Add remaining ingredients and mix thoroughly.
    3. Form into small cakes (about 150g each, should make 7-10). Cook on the flat grill section of a bbq.
