Recipe Introduction
I have written vego option in this one.
This one is able to be varied in a dozen ways. Just use your imagination.
Serves 4 generously (I have made enough for 1-2 by making less)
List of Ingredients
- 1 red onion
- 2 tomato
- 4 cloves garlic
- large piece ginger
- 1 piece bok choy
- 1 tbs tomato paste
- 3 tbsp black bean sauce (black bean with ginger is good)
- 1 tbs dark soy sauce
- 1 tbs light soy sauce
- 2 chicken breasts (or use squid or for vego omit)
- 1-4 cubes tofu (optional, but use lots if chicken not used)
- 500g hokkien noodles
- large heap of beansprouts
- lemon wedges
Instructions
- Slice chicken and fry in wok until cooked, set aside. Deep fry cubes of tofu, drain and slice.
- Fry onion until well cooked in very hot wok (blackened slightly is good) add tomato, garlic and ginger and stir until fragrant.
- Add in all sauces, adding 1-2 tbs water only if needed. Please do not overdo the water.
- Add the bok choy and let it wilt slightly. Add in chicken and stir in noodles. Cook well so flavours combine always stirring.
- Stir in beansprouts and het through. add them a bit earlier if you like very collapsed ones I prefer just heated though.
- serve with lemon wedges.

can include mushrooms, baby spinach or whatever takes your fancy
