Penang Mushroom and Beef Curry

List of Ingredients
- 2 tbs peanut oil
- 300g flat mushrooms, thickly sliced
- 500g beef fillet or sirloin cut into 1 cm thick slices
- 1/4 cup coriander leaves
- 1/4 cup penang curry paste
- 1/2 red capsicum, sliced
- 300 ml coconut cream
- 1/4 cup unsalted peanuts, roughly chopped
- boiled rice to serve
Instructions
- Heat a wok over high heat. Add I tbs oil and half the beef. Stirfry 2 min or until beef tender (remember they are small pieces and dont need long)
- Remove and keep warm while you use the rest of the oil and beef in the same way.
- Remove beef. Add curry paste to wok and fry 1 minute until aromatic. Add meat back in, stirring to coat it.
- Add coconut cream and mushrooms. Bring to the boil. Reduce heat to medium low and simmer for 5 minutes.
- Stir in capsicum and cook for 1 minute (until tender)
- Spoon into serving bowls. Top with coriander and peanuts. Serve with rice.
