    vego option - use tofu instead of meat. Vary the amount of meat/tofu depending if this is your main or a side


    List of Ingredients


    • 3 spring onions, sliced
    • 6 celery, sliced
    • 500g vermicelli noodles
    • 200g prawns or shrimp and/or cooked chicken
    • 200g chinese sausage/ chinese roast pork (optional)
    • 1 tbs curry paste
    • soy sauce
    • 2 eggs
    • 3 grated carrots
    • peanut oil and a small touch sesame oil


    Instructions


    1. Mix eggs with a tbs water and some fish sauce if you like (just a drop)
    2. Heat wok with small amount oil and when hot add a thin layer egg mixture. As it sets roll it up and then take it off the wok to drain. repeat until all the egg cooked.
    3. when it cools cut each roll into slices which will look like attractive spirals.
    4. Heat more oil in wok, cook celery and carrot until softened.
    5. Add in noodles and meat and mix through adding curry powder as well.
    6. serve topped with sliced egg, spring onions and soy sauce to taste.
