vego option - use tofu instead of meat. Vary the amount of meat/tofu depending if this is your main or a side
List of Ingredients
- 3 spring onions, sliced
- 6 celery, sliced
- 500g vermicelli noodles
- 200g prawns or shrimp and/or cooked chicken
- 200g chinese sausage/ chinese roast pork (optional)
- 1 tbs curry paste
- soy sauce
- 2 eggs
- 3 grated carrots
- peanut oil and a small touch sesame oil
Instructions
- Mix eggs with a tbs water and some fish sauce if you like (just a drop)
- Heat wok with small amount oil and when hot add a thin layer egg mixture. As it sets roll it up and then take it off the wok to drain. repeat until all the egg cooked.
- when it cools cut each roll into slices which will look like attractive spirals.
- Heat more oil in wok, cook celery and carrot until softened.
- Add in noodles and meat and mix through adding curry powder as well.
- serve topped with sliced egg, spring onions and soy sauce to taste.
