    Recipe Introduction


    Sushi is a fantastic Japanese invention. It does toake some effort to make. The results make a good eats straight away meal or a take with you lunch or party finger food.


    List of Ingredients


    • 3 cups medium grain rice (japonica is good)
    • 1/3 cup rice vinegar
    • 1 tbs granulated (white) sugar
    • 1 tsp salt


    Instructions


    1. Wash rice in large bowl with cold water and drain. Keep repeating this step until the water runs clear. Drain well.
    2. Let stand 20 minutes. Combine with 3 cups water in a large saucepan.
    3. Cover and bring to boil at high heat. Reduce heat and simmer 20-25 minutes until water absorbed. Remove from heat and let stand covered 20 minutes (if you prefer cook rice in a rice cooker.)
    4. Turn cooked rice into a large bowl. Combine vinegar, sugar and salt in a small saucepan. Cook over high heat until sugar dissolves.
    5. Pour over rice and fold or cut in with a flat wooden spoon. Do not stir. Cool to room temperature.
