Vietnamese Cold Rolls

Recipe Introduction
This is a yummy lunch or if you are keen an entree for dinner. If you can't afford prawns, marinate some chicken in white wine, honey, garlic and soy and bake it for a short time instead. We did.
List of Ingredients
- Cooked Prawns (large ones)
- iceberg lettuce
- bean sprouts
- mint leaves or Vietnamese mint
- coriander (cilantro) leaves
- vermicelli (noodles made from beans)
- Vietnamese dipping sauce
- cold roll wrappers (supermarkets or asian grocers have them these days)
Instructions
- Halve prawns lengthwise. soak vermicelli in hot water and chop into pieces.
- Mix shredder lettuce with finely chopped herbs
- Follow packet instructions to soften wrappers.
- Lay prawn halves, lettuce mix, vermicelli and bean sprouts on wrapper. wrap up (this takes some practise). Moisten edges with water to stick and set aside until ready to serve.
- serve with dipping sauce.
Final Comments
I was pretty hungover and distracted and all but from memory i think that is how he did it. He might have put chopped peanuts in them too i am not sure.
