    Recipe Introduction


    I wanted something different than spag bog. My kids needlot of carbs and don't like eggplant so here is what I did.

    serves 6 with leftovers (but leftovers are good in a family with teenagers)


    List of Ingredients


    • 6 large potatoes, sliced and parboiled (I used microwave)
    • 3 zucchini, sliced
    • 500g kangaroo mince (can use beef or lamb)
    • 1 onion, chopped
    • 4 cloves garlic, finely chopped (can use less)
    • 2 cloves
    • a lot of cinnamon (sprinkled)
    • a lot of allspice (sprinkled)
    • about 300g grated cheddar cheese
    • 1 cup breadcrumbs
    • dried mixed herbs (sprinkled)
    • salt and pepper (sprinkled)
    • about 4 tbs tomato paste
    • 1 bottle (300ml) tomato puree
    • generous cup red wine
    • 2 carrots (chopped as fine as I could be bothered)
    • olive oil


    Instructions


    1. Heat some oil and cook onion, carrot and garlic until aromatic.
    2. Add mince and spices. Turn up heat and add wine. Let the wine boil off a bit.
    3. Mix in tomato (it's best to break up the meat at this stage) and add water if desired. Also add 1/2 cup breadcrumbs (don't overdo them).
    4. Cover and simmer slowly about 20 minutes.
    5. Meanwhile be parboiling to potatoes. Also heat a lot of oil in a pan. Sprinkle salt on the zucchini slices and fry them in the oil until soft but not brown.
    6. In a deep lasagne tray or similar layer potatoes, sprinkled with cheese, zucchini, meat sauce. You will probably get 3 layers potato and 2 of the other layers.
    7. Cover top of potato with rest of breadcrumbs and cheese. Cook very slowly in a oven turned down low for an hour or more.


    Final Comments


    I served this with bake at home rolls and butter, and glasses of orange juice. I suspect adults might like a green salad and a glass of red
