Beef and Vegetable Tacos

served 4 (makes 12 but unless u have a lot of sides who can live on just 2 tacos like they recommend?)
prep 15 minutes, cook 20 minutes.
If you want vegetarian omit meat and add more veg, or use tvp
List of Ingredients
- 1 tbs olive oil
- 1 carrot, grated
- 1 onion, finely chopped
- 400g lean beef mince (or use kangaroo)
- 1 zucchini, grated
- 250g button mushrooms, thinly sliced
- 35g taco seasoning
- 1/4 cup water
- 12 taco shells
- 4 lettuce leaves, shredded
- 1 avocado, mashed
Instructions
- Heat oil in a large non-stick frypan over medium high heat. Add onion and cook for 3 minutes until soft.
- Add beef and cook, stirring often to break up mince for 6-8 minutes or until browned.
- Add carrot, zucchini, mushroom, taco seasoning and water. Cook stirring 6-8 minutes until veg tender and water has evaporated.
- Preheat oven to 180C. Place taco shells onto baking tray and heat for 10 minutes until hot but not browned (I am lazy and use the microwave :/ )
- Place lettuse in base of shell, top with mince mixture and serve with avocado. Drizzle over taco sauce, sour cream or salsa if you like to.
