    Beef and Vegie Burritos

    If you ever want to make burritos with more vegies and less meat (for health or economy) here is one way to do it. Vegetarians can substitute mushroom for the meat or just use mpore frozen veg.


    List of Ingredients


    • 1 1/2 red onions, sliced
    • 1/3 green capsicum (sliced)
    • 250g steak (sliced)
    • 1/2-1 cup frozen veg (I used a mix of carrot, beans, cauliflower and broccoli)
    • squeeze lemon (or lime would do)
    • 3 tbs veg oil (or olive oil)
    • 1 burrito kit (I used woolworths select but they are all similar, use what is cheap)
    • 1 tomato
    • handful rocket (or shredded lettuce)
    • grated cheese (I used mozzarella)
    • 1/2 cup diced zucchini (whatever veg you need to use up - corn, spinach or whatever would work here)


    Instructions


    1. Heat oil and fry onion and capsicum on high, stirring constantly. Stir in meat and zucchini and allow all to combine and cook.
    2. Add in frozen veg and stir until defrosted.
    3. Add i cup water and seasoning sachet (or consult your burrito kit) and simmer until it all comes together and seems cooked (probably less than the ten minutes the packet claims.
    4. Heat tortillas and add grated cheese. Spoon over meat and veg mix and top with slices of tomato and rocket. Drizzle with salsa, roll up and enjoy.


    Final Comments


    I used 2 tortillas a person and since there were only two of us we had some leftovers. Leftover tortillas make good wraps for school with a mix of salads, cold meat and the leftover salsa drizzled over)

    My son likes LSA on his buritto so I put some of that on for him.
