Chicken and Avocado Burritos

if you make this for kids just call it burritoes because words like "chicken" and even worse "avocado" while fairly harmless to you and me can injure the oversensitive ears of small children causing them to faint at the sight of a vitamin.
List of Ingredients
- 1 tbs olive oil
- 8 long chive leaves (optional)
- 1 bunch spring onions, sliced
- 2 tsp ground cumin
- 8 burritos wrappers (I assume they mean tortillas or mountain bread)
- 3-4 garlic cloves (chopped)
- 1 red capsicum, seeded and sliced
- 1 tbs ground coriander
- 2 tsp sliced (or chopped) chilli (may omit for small ones)
- 2 chicken fillets (trimmed and diced)
- 2 firm ripe tomatoes (diced)
- 1 avocado (diced)
- avocado and coriander salsa or guacamole (see recipes)
- coriander leaves and sliced chillis for decorating
- lime wedges
- natural yoghurt
Instructions
- Heat oil in large frypan or saucepan and stir chillies, garlic and chicken over a medium high heat for 5 minutes.
- Stir in spring onions, capsicums, tomatoes, cumin and coriander, cook gently for 10 minutes.
- Heat burrito wrappers according to packet directions. Add avocado to chicken mixture.
- Spoon chicken mixture onto burritoes, wrapping each and securing with a chive leaf.
- Serve decorated with all garnishes as desired.
