    List of Ingredients


    • 2 2/3 cups wholemeal flour
    • 1 1/4 cups hot water
    • 125g button mushrooms, sliced
    • 1 clove garlic, crushed
    • 200ml jar taco sauce
    • 1 tsp salt
    • 40g butter
    • 2 cooked chicken fillets, diced
    • 3 spring onions, chopped
    • 1 1/2 cups light sour cream
    • 1/2 cup grated cheddar cheese


    Instructions


    1. Combine flour and salt together. Rub in butter then mix in hot water to form a dough. Knead until smooth.
    2. Divide into 12 pieces and roll each piece out thin to form a tortilla, 20cm in diameter.
    3. Heat a non-stick frypan and cook each tortilla for 30 seconds on each side until golden.
    4. Combine chicken, mushrooms, spring onions, garlic, 1 cup sour cream and half the cheese together.
    5. Place mixture in centre of each tortilla, fold in the sides. Place in a baking dish side by side.
    6. Pour over taco sauce and sprinkle with remaining cheese. Bake at 180C for 20 minutes or until heated through. Serve with remaining sour cream.

    I will try to make a gf, vegan version of this :)
