    This is a cheaper paella without saffron or seafood, however you can omit halof the chicken and add in some fresh prawns when the rice is half cooked if you prefer.


    List of Ingredients


    • 2 tbs olive oil
    • 400g boneless chicken thighs, cubed
    • 1 onion, diced
    • 1 chorizo or Italian sausage, chopped
    • 2 cloves garlic, crushed
    • 1 tsp paprika
    • 2 3/4 cups short grain rice
    • 4 cups chicken stock (use stock cubes if you want)
    • 3 ripe tomatoes, diced (omit if making it for Matthew)
    • 4 cups chopped veg - eg celery, mushroom, peas, capsicum, green beans, carrots, zucchini, fennel)
    • parsley


    Instructions


    1. Heat oil in a large frypan and brown chicken and chorizo.
    2. Add onion and cook until soft. Add garlic, paprika and rice. Cook stirring rapidly 1-2 minutes.
    3. Add stock, tomatoes, and vegetables. Bring to the boil and cover. Cook on a low heat 15-20 minutes until rice is cooked.
    4. Serve sprinkled with parsley.
