    Crumbed Flathead burgers/Caper Mayo

    serves 4. Kids might like to help with the crumbing. babay spinach works if you prefer to iceberg


    List of Ingredients


    • 300g flathead fillets
    • 50g breadcrumbs
    • 1 tbs parsley, chopped
    • 1 tsp dried salted capers, chopped
    • zest of one lemon
    • 50g plain flour
    • 1 egg
    • olive oil for cooking
    • 4 half baguettes/crusty rolls split and toasted
    • shredded iceberg lettuce
    • sliced tomatoes
    • tartare sauce
    • roasted veg (eg potatoes)


    Instructions


    1. Clean flathead and remove bones.
    2. Combine breadcrumbs, parsley, capers and lemon zest on a plate. Place flour on another plate. Lightly beat egg in a shallow bowl.
    3. Coat 1 fillet at a time in flour. Dip in egg then gently press into breadcrumb mixture. Place onto large plate.
    4. Heat oil in large frypan over medium heat. Cook fish for 2 mins each side until cooked through.
    5. Layer rolls with lettuce and tomato, fish fillet, tartare sauce and then top of roll.
    6. Serve with roast vegies, extra tartare sauce and lemon wedges.
