Crumbed Flathead burgers/Caper Mayo

List of Ingredients
- 300g flathead fillets
- 50g breadcrumbs
- 1 tbs parsley, chopped
- 1 tsp dried salted capers, chopped
- zest of one lemon
- 50g plain flour
- 1 egg
- olive oil for cooking
- 4 half baguettes/crusty rolls split and toasted
- shredded iceberg lettuce
- sliced tomatoes
- tartare sauce
- roasted veg (eg potatoes)
Instructions
- Clean flathead and remove bones.
- Combine breadcrumbs, parsley, capers and lemon zest on a plate. Place flour on another plate. Lightly beat egg in a shallow bowl.
- Coat 1 fillet at a time in flour. Dip in egg then gently press into breadcrumb mixture. Place onto large plate.
- Heat oil in large frypan over medium heat. Cook fish for 2 mins each side until cooked through.
- Layer rolls with lettuce and tomato, fish fillet, tartare sauce and then top of roll.
- Serve with roast vegies, extra tartare sauce and lemon wedges.
