Gratin of Chicken with Rice

List of Ingredients
- 500g chickenthighs
- 2 cups water
- 1 small onion, halved
- 2 tbs butter
- 125g mushrooms, sliced
- 1/4 tsp nutmeg
- 1 stick celery, sliced
- 1 small carrot, sliced
- salt and pepper
- 1 med onion, finely chopped
- 2 tbs flour
- 1/4 cup cream
- 3 cups cooked rie
- 2 tbs grated gruyere cheese
Instructions
- Remove chicken skin (and discard) Place chicken on saucepan with water, celery onion, carrot, salt and pepper.
- Bring to the boil. Turn down heat and simmer 30 minutes. Allow to cool in the stock. Remove thighs, strain and reserve 1 cup stock.
- Cut thigh meat from bone into bite sized pieces.
- In a clean saucepan melt butter and saute onions. Add mushrooms and cook until tender. Sprinkle in flour and stir over heat 1 minute.
- Remove from heat and stir until mixture boils and thickens. Reduce heat, add chicken pieces, cream and nutmeg. Simmer slowly for 5 minutes.
- Place rice in a shallow, ovenproof dish. Pile in chicken mixture leaving a border of rice.
- Sprinkle top with grated cheese and place under a hot grill to melt and brown the cheese. Serve immediately.
