    Nachos with Meat

    Recipe Introduction


    I also have a vegetarian nachos in the vegetarian section. This recipe really appeals to my "other kids", my youngest son's siblings from his dad. Serves about 6 unless greedy


    List of Ingredients


    • 500g minced beef or kangaroo
    • 1 large onion
    • 1 can red kidney beans (or prepare from dried)
    • 1 pckt taco seasoning
    • 1 bottle taco sauce
    • 2 tbs tomato paste or 1 bottle tomato puree
    • 1/2 glass wine (red for preferance)
    • 1/2-1 tsp coriander
    • 1/2-1 tsp cumin
    • 2-5 garlic cloves
    • olive oil
    • 2 packets corn chips
    • grated cheese of your choice (one that melts well)
    • 1-2 avocadoes
    • sour cream (or plain yoghurt)


    Instructions


    1. Finely chop onion and garlic.
    2. Heat oil and cook onion and garlic on lowish heat stirring unti it smells nice.
    3. Add meat. Stir and chop in pan until brown.
    4. Turn up heat and throw in spices, tomato, wine (grated veg may be added here). Boil one minute.
    5. Turn down heat and add seasoning (some water if needed), (drained and rinsed) beans and sauce
    6. Cook gently 'til it seems done.
    7. Layer in baking dish with cheese and chips (or if oven is broken we microvave individual serves of chips and chees 30 seconds til melted and top with sauce.
    8. Mash avocado with sour cream or mash it with lemon. Serve avocado and sour cream as optional toppings (jalepino peppers-the ones in a jar can also be served but not to my kids)


    Final Comments


    For extra sweetness and vitamins grated or finely chopped carrot and/or zucchini can be added.
