One pot Mexican Rice

This was designed to be used with continental Rich Beef and Mushroom flavoured rice, 120g packet. As the flavours of these change often and all the brands are similar, use whichever you like.
List of Ingredients
- 300g lean beef strips
- 1 1/4 water
- 120g instant flavoured rice
- 1 small capsicum (sliced)
- 1 cup cooked red kidney beans (tinned is ok)
- olive oil (or any cooking oil except palm)
- to serve- sour cream, tomato, avocado
Instructions
- Heat oil and cook beef and capsicum until beef is browned.
- Add water and bring to the boil.
- Stir in rice and beans, cover and cook for 10 minutes (make sure beef is cooked).
- Stir well, replace lid and allow to stand (off heat) for 2 minutes.
- Chop tomato and avocado and sprinkle over each serving with a dollop of sour cream
Final Comments
For vegetarian, use a vegetarian flavour, omit beef and add corn or mushrooms. For a hotter rice add chopped chillis.
For a satay variation add chicken instead of beef and frozen veg of your choice instead of beans and serve with chili, cucumber, cabbage and carrot sprinkled (raw) over the top
