Quesadillas with Mango Salsa

serves 4-6 (depends on greediness)

List of Ingredients
8 tortillas (more may be required)
1 red onion
2 mangoes
1/2 green chilli
1/3 bunch coriander (perhaps for this recipe I should call it cilantro)
1/2 lime
1/4 tsp salt
1/2 tsp sugar
4 cloves garlic
2 rump steaks
1 onion
peppercorns
a bayleaf
1 tbs salt
shredded cheese (I used my old favourite mozzarella but it can be any)
1/2 a bag baby spinach leaves
2 avocadoes
1 carton sour cream (may not need all of it)
1 tin (400g) kidney beans
a sprinkle of coriander powder
a sprinkle of cumin powder
a sprinkle of chilli or paprika powder.Recipe
1.Place about 3 cups water and the tablespoon of salt (maybe even more salt) in a saucepan, add peppercorns (small amount) bayleaf, onion(finely chopped) and half the garlic (finely chopped).
2.Add steaks (or any similar piece of meat) and bring to boil, turn right down to the barest simmer and cook a good long time until meat very very tender and flakes easily. Dont let the water get too low or it will burn (hence low heat and lid)
3. Meanwhile finely chop the red onion, combine half of it with lime juice, chopped chili, chopped coriander and cubed mango in a bowl. Add 1/4 tsp salt and add sugar (unless the mango is perfectly in season in which case it may not need it). What the hell if you can get it add another mango in...yum.
4. When the meat is ready let it cool enough and then chop or shred it finely.
5. Open the tin of beans and drain. Wash the beans (in a sieve) really well (this is to make them not cause farting).
6. Heat a small amount of olive oil and on low heat saute reserve half onion and garlic. Add cumin, coriander and paprika and mix well. Add in beans and mash (with a potato masher). They dont have to be perfectly mashed either just broken up a bit.
7. Mash the avocado adding sour cream and seasoning if you like (I dont bother since it all compliments best with a creamy/bland avocado)
8. Place a tortilla on a plate, spread shredded meat, mashed beans, baby spinach leaves and cheese over it and top with second tortilla.
9. Cook in sandwich press (if you dont have one use oven or pan or even barbecue plate) for about 5 minutes until golden brown and yummy filling oozing out sides.
10. Cut into wedges and top with mango salsa, avocado and extra sour cream.
NOTE- If you cant be bothered cooking beef use a precooked barbecue chicken just shred and use
-if you cant be bothered making beans use a tin of refried beans
-if you cant be bothered making salsa get a salsa or taco sauce out of a jar (wont be mango but)
I think it is worth it doing the whole thing but there are so many shortcuts. If the recipe is too easy make your own tortillas, if it is still too easy make your own cheese
