Sausage, Capsicum and Mushroom Rolls

List of Ingredients
- 2 tbs olive oilo
- 6 thin beef sausages
- 2 medium brown onions, sliced
- 2 tbs balsamic vinegar
- 2 medium capsicums cut into medium slices (1 red, 1 green is best)
- 1 cup of cup mushrooms
- 1 1/2 tsp mustard
- 200g capel cut cheddar cheese (I dont know what capel cut means either, you could probably use sliced or grated)
- 4 long white rolls
- 2 cloves garlic, finely chopped
Instructions
- Heat 1 tbs olive oil in frying pan over medium high heat. Cook sausages until golden brown (turning once). Set aside. Slice diagonally.
- Return pan to heat and add remaining oil. Add onions and cook until lightly browned and soft. Add vinegar and cook until liquid has evaporated.
- Add garlic and capsicum and cook until softened (5-7 minutes). Add (sliced?) mushrooms and cook until softened (about 5 mins)
- season to taste and stir in the sliced sausages.
- Slice rolls down centre and spread half of each with 1/4 tsp mustard. Divide cheese between the rolls and sprinkle over the mustard. Place under preheated grill for a few minutes just to slightly toast roll and melt the cheese.
- Remove rolls from oven and fill each one generously with the sausage mix. slice in half and serve.
Final Comments
although the recipe didnt say I suspect most kids would prefer this with tomato sauce (ketchup), vegetarians could eat the same thing without sausages added
