    Recipe Introduction


    serves 4, inexpensive. Vary as required (almost any ingredient can be left out if u want). It's very very quick depending on how fast you are at chopping things

    You could serve them on bread (split vietnamese rolls) I think instead of the rice. You could have it with green or bean salad or coleslaw too


    List of Ingredients


    • 1 large onion, sliced
    • 3 cloves garlic, finely chopped
    • 6 sausages (beef is good)
    • 3 small carrots (or one large), sliced
    • 1 medium zucchini (or a few slices of a large one), sliced
    • 1/2 cup of red wine (I used Jacob's Creek and it was totally worth it, but a cheap one would be ok)
    • good pinch dried marjoram
    • pinch of cayenne
    • salt and pepper to taste.
    • cooking oil (I always use olive but not a lot was needed because the sausages had some fat in them)
    • a jar (400g) of tomato based pasta sauce (I used a cheap one which claimed to have mushrooms in it)


    Instructions


    1. Heat large pan or wok. Add 1/2 tsp oil (or as needed). Fry sausages on all sides until lightly cooked (done but only just)
    2. Remove sausages to a plate and halve them.
    3. Use the same fat in the pan (adjust amount as needed) to lightly cook onion, garlic and carrot. (on low for about 3-5 mins)
    4. Add in zucchini and let it start to cook. Then add herbs, seasonings and wine and turn up to high for 2 minutes.
    5. Add sausages back in together with tomato sauce and a little bit of water. Turn back to medium-low and let heat through (maybe 5 min)
    6. Serve over rice. Even nicer if made day before (so ideal leftovers). You could double the recipe if your family really like it (mine did)


    Final Comments


    You could add celery, fennel, mushroom, capsicum, whatever you have in the fridge instead of the veg. If you use chunks of meat instead of sausages they may need a longewr cooking time. White wine or no wine is probably ok. Use any herbs u like with a tomatoey sauce
